Fresh, white Thai rice noodles are a little bit like vermicelli or angel hair pasta. But the style I have become used to is a fresh noodle, that’s wobbly and wiggly and sold in peculiar little bunches of single servings. I have also seen this sold in big basket tubs. It’s a really good, cheap eat, but I didn’t know that until recently.
As a wondering wanderer in this world of ours, I have eaten and seen people eat some strange stuff. A chicken foot related funny memory I have is while I was working Bolivia, some friends brought some chicken feet as a novelty barbecue item to a barbecue we were having. It got a good laugh, but none of us really ate them. We had a good laugh, I chewed on a toe, but I would like to think we all agreed, “you can’t really eat chicken feet”.
But, as I have been married for several years now to “chicken foot eater”, I can definitely say that people eat chicken feet. I have always wondered about why or how. But again, I have no interest in eating chicken feet. There is a lot of cartilage and skin and I want some meat on my bones. I like buffalo wings and those are not very meaty, but there is still some meat. A chicken foot is a chicken foot, little more than skin. Plus, I just don’t want to eat foot, period.
Although I did not take any pictures of this in the sauce, because the flavor is not in the foot. It is in the sauce and it is very easy to substitute chicken thighs or legs to get the depth of flavor from the bone, but without the foot.
I like to eat ramen. And there are some amazing ramens out there. I have had incredible Japanese ramen with deliciously tender pieces of pork. But I always find the vegetables to be lacking.
Thai Rice Noodles with Chicken is a great balance of noodles, chicken and vegetables. And since it is most often served “home-style”, where you put it together yourself, you can match it to your preferences.
The three main components of this dish are:
1. The orange-red sauce which has ground chicken, garlic and a ginger-like root rhizome called fingerroot or Chinese ginger.
2. Fresh, white Thai Rice Noodles
3. A mix of fresh vegetables. Included in this assortment are bean sprouts, sliced cabbage, a lemony version of basil called Thai Lemon Basil or Hoary Basil and finely chopped long bean, which is almost the same as western green beans, except for the fact that they are ridiculously long.
Almost like a soup, but a little bit like an all-in-one stew. This meal is both hearty and light. Although it appears to look like a soup, it really is not. Imagine a bowl of spaghetti that is in a thinner sauce. Add a bunch of vegetables and ground chicken. Then you are getting closer to this delicious bowl of noodles.
Because my wife cares about me. My wife understands that I do not always eat the same things as her. I have adjusted for certain things, see my Keto Crickets article for one of my adjustments.
And a significant part of it is, I am totally uninterested in eating chicken feet. I assumed the dish was not for me and my wife assumed I would not like the dish because of the chicken feet.
Well, I don’t have to eat the chicken feet, to enjoy the dish. And neither do you. The sauce, the vegetables, the noodles, they make a harmonious and flavor-filled dish all on their own. I have not made this dish by myself yet, but when I do, I know I can easily substitute chicken thighs and legs for the feet.
